Fennel Salad
This super simple salad is sure to please and has some unique flavors!

- 1 medium green apple
- 1/2 large fennel bulb use a full bulb if it's a small one
- 1/4 cup crumbled blue cheese
- 1/4 cup chopped walnuts
- 1 1/2 tablespoons olive oil extra virgin is best
- 3/4 tablespoon apple cider vinegar you can use white balsamic, or champagne vinegar
- salt to taste
- pepper to taste
slice the fennel bulb in thin strips. Don't forget to remove the tough core from the fennel.
Slice the apple into thin half moon strips
Toss in the blue cheese and walnuts
Add salt and pepper to taste
Add the oil and vinegar
Toss to combine!
Work quickly so the apples don't turn brown! If you a slow chopper/slicer, sprinkle your apples with a little lemon juice or vinegar while you work!
I like things a little sour (despite my sunny disposition)! Feel free to adjust the oil and vinegar ratio to your liking!
This recipe will serve 4, but my husband and I have been known to eat it all (it's a salad, so that counts as healthy) !
