Figs with Blue Cheese, Walnuts and Honey

Ingredients
  

  • pound fresh figs
  • 2-3 ounces crumbled blue cheese gorgonzola is good too
  • 2 tablespoons chopped walnuts
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • olive oil for oiling the cookie sheet

Instructions
 

  • Pre-heat oven to 400 degrees. Wash the figs, cut off the stem and cut them in half. Place the figs cut side up on a lightly oiled cookie sheet. Drizzle the figs with balsamic vinegar and roast for 5-7 minutes. This will help sweeten the vinegar.
  • Remove the figs from the oven and stuff the figs with some chopped walnuts . Just press them into the center opening. Top with crumbled blue cheese. Place them back the over for an additional 5-7 minutes or until the cheese is melted.
  • Remove from the oven and drizzle with honey.
  • Serve!
