Kalamata olives
drained and rinsed

olive oil

tablespoons
dried oregano
juice of half a lemon
zest of half a lemon

salt & pepper
Instructions
Pre-heat oven to 400 degrees. Scrub the potatoes and cut them into small wedges. Leave the skin on. If desired, zest half a lemon and set aside.
In bowl, toss the potatoes with salt and pepper, oregano, lemon juice, and olive oil.
Add the potatoes to a baking dish and add the olives.
Roast for 1 hour. Sprinkle with lemon zest if desired. Serve
