Greek Style Potatoes

Ingredients
  

  • 6 small potatoes
  • 1 cup Kalamata olives drained and rinsed
  • 2 tablespoons olive oil
  • 1 tablespoons dried oregano
  • juice of half a lemon
  • zest of half a lemon optional
  • salt & pepper

Instructions
 

  • Pre-heat oven to 400 degrees. Scrub the potatoes and cut them into small wedges. Leave the skin on. If desired, zest half a lemon and set aside.
  • In bowl, toss the potatoes with salt and pepper, oregano, lemon juice, and olive oil.
  • Add the potatoes to a baking dish and add the olives.
  • Roast for 1 hour. Sprinkle with lemon zest if desired. Serve
