Pre-heat the oven to 400 degrees. In a bowl combine ground beef, onion, garlic, breadcrumbs, cheese, egg and salt and pepper.
Mix to combine, but don't over mix. Take a large sheet of parchment paper and lay it down a flat surface. Take your meat mixture and spread it onto the paper in a large oval shape.
Next top it with slices of prosciutto.
Now top the prosciutto with the cheese (shredded cheese is fine).
Using the parchment paper to help you, begin to roll the meat starting from one end and working towards the other end.

When you are done rolling, seal the seam and the ends. Place the log into a baking dish and coat with 1 tablespoon of olive oil. Bake for 45 minutes to 1 hour or until cooked through.
Remove from the oven after and let the meat rest for 10 minutes.
After 10 minutes, slice the meat into about 1 inch slices and serve.
