13 ounce packagejulienne sun dried tomatoesI used smoked
2tablespoonsolive oil
1/4large red onion ( use whatever king of onion you like)chopped
2clovesgarlicchopped
1/4 cupwhite wineoptional
1/4cupchicken broth or wateradd more as needed
1tablespoonbutter
salt & pepper
Instructions
Chop your garlic and onion.
Heat olive oil in a large saute pan over medium heat. Add onions and garlic and salt & pepper. Cook until the garlic and onion start to cook down slightly.
Add sun dried tomatoes and cook until the tomatoes release some of their oils-about 5 minutes.
Add the string beans and toss until they are coated with tomato, onion & garlic. Add more salt & pepper if needed.
Add the wine if using & cook until the wine has evaporated. Skip this step if not using wine.
Add chicken broth or water and cover the beans and allow them to steam until they reach their desired level of crunchiness. About 10 minutes. Add more broth or water as needed to cook the beans.
At the end, add 1 tablespoon of butter to the pan, and give it a final quick mix.
