String Beans & Sun Dried Tomatoes-quick side dish

Ingredients
  

  • 1 pound string beans washed, ends trimmed
  • 1 3 ounce package julienne sun dried tomatoes I used smoked
  • 2 tablespoons olive oil
  • 1/4 large red onion ( use whatever king of onion you like) chopped
  • 2 cloves garlic chopped
  • 1/4 cup white wine optional
  • 1/4 cup chicken broth or water add more as needed
  • 1 tablespoon butter
  • salt & pepper

Instructions
 

  • Chop your garlic and onion.
  • Heat olive oil in a large saute pan over medium heat. Add onions and garlic and salt & pepper. Cook until the garlic and onion start to cook down slightly.
  • Add sun dried tomatoes and cook until the tomatoes release some of their oils-about 5 minutes.
  • Add the string beans and toss until they are coated with tomato, onion & garlic. Add more salt & pepper if needed.
  • Add the wine if using & cook until the wine has evaporated. Skip this step if not using wine.
  • Add chicken broth or water and cover the beans and allow them to steam until they reach their desired level of crunchiness. About 10 minutes. Add more broth or water as needed to cook the beans.
  • At the end, add 1 tablespoon of butter to the pan, and give it a final quick mix.
  • Check for seasoning. Serve!
