Using about half the olive oil, brush each pork chop with oil and season with salt & pepper.
Chop pistachios with a mini food chopper, pulse in a blender, or place in a zip top bag and crush them with a meat mallet. You want them chopped fine, but a few larger chunks are fine- I like the texture!
Add the pistachios, cheese, breadcrumbs and salt& pepper to a shallow bowl and mix.
Press each pork chop into the mixture to coat on both sides.
Oil a baking sheet with the remaining oil and place the coated pork chop on the sheet for baking.
Bake for 30 minutes until golden brown and the pork is cooked through.
Remove to a serving platter and serve with a squeeze of lemon on top!
