Parmesan & Pistachio Crusted Pork Chops

Ingredients
  

  • 4 boneless pork chops about 1/2 inch thick
  • 3 tablespoons olive oil
  • 1/4 cup pistachios shelled and chopped fine
  • 1/2 cup Italian style breadcrumbs
  • 1/2 cup Parmesan cheese grated
  • salt & pepper
  • lemon for squeezing on top when serving

Instructions
 

  • Preheat oven to 400 degrees.
  • Using about half the olive oil, brush each pork chop with oil and season with salt & pepper.
  • Chop pistachios with a mini food chopper, pulse in a blender, or place in a zip top bag and crush them with a meat mallet. You want them chopped fine, but a few larger chunks are fine- I like the texture!
  • Add the pistachios, cheese, breadcrumbs and salt& pepper to a shallow bowl and mix.
  • Press each pork chop into the mixture to coat on both sides.
  • Oil a baking sheet with the remaining oil and place the coated pork chop on the sheet for baking.
  • Bake for 30 minutes until golden brown and the pork is cooked through.
  • Remove to a serving platter and serve with a squeeze of lemon on top!
