Over medium heat, saute the sausage in 1 tablespoon of olive oil.
While sausage is browning, cut the onions and peppers.
Add the onions and peppers to the sausage. Combine.
Saute for about 5 minutes. Season with salt and pepper.
In a small bowl, whisk together the wine and tomato paste.
Add the tomato paste mixture to the onions and peppers and saute for about 2 minutes.
Add the water and 1 teaspoon of oregano. Bring to a high simmer. Lower the heat to medium low, cover and cook for about 15-20 minutes. For a thicker, less saucy sauce: use less water and/ or cook uncovered. Season with salt & pepper.
Serve with an sprinkle of remaining oregano. Great over pasta or rice with some crusty bread. Try it in a sanswich!
