Gnocchi with Gorgonzola Cream Sauce & Bacon

Ingredients
  

  • 1 pound gnocchi pasta
  • 2 cups milk not skim
  • 2 tablespoons butter
  • 2 cloves garlic smashed
  • 1/2 cup Parmesan cheese grated
  • 4 ounces Gorgonzola cheese crumbled or broken into small pieces by hand
  • 2 tablespoons leftover cooked crumbled bacon
  • salt & pepper

Instructions
 

  • In a non stick saute pan add the milk and heat over medium heat to a slow simmer. Reduce the heat to medium low. Add the crushed garlic and butter and simmer for five minutes.
  • Fish out the garlic and add the crumbled gorgonzola cheese. Whisk until melted.
  • Get your gnocchi going. They only take about 3-5 minutes to cook.
  • While the gnocchi cook, add the Parmesan cheese to the sauce. Add salt and pepper to taste. Add more cheese if the sauce is too thin (either more gorgonzola or Parmesan). Keep whisking!
  • Drain the gnocchi and gently mix with the cheese sauce. Top with crumbled bacon & serve!
