Tortellini with Prosciutto & Peas

It’s okay to indulge every now and again right? This recipe pretty simple and perfect for a luxurious weeknight dinner. Date night? This is sure to impress that person in your life! Just look at it! Who doesn’t love tortellini? It’s salty and creamy! Plus, it has peas, so it counts as healthy right? Well it does have a good amount of cream and Parmesan so maybe healthy is a bit of a stretch! But, I will say it was gobbled up and my kids asked why I don’t make this more often. Well, I don’t have an answer to that, but I plan to make it again sooner rather than later.

I used prosciutto and chicken filled tortellini for this recipe. Perfect right? If you can’t find that, no worries. Tortellini are filled with all kind of things like cheese, mushrooms, meat and vegetables like squash. Just pick one you like. They are frequently buy one get one free at my store, and that’s when I pick them up! I also use prosciutto in this recipe. If you can’t find it, bacon or pancetta works too!

Tortellini with Prosciutto & Peas

Ingredients

  • 2 tablespoon olive oil
  • 3 cloves garlic smashed
  • 4-6 ounces prosciutto thin sliced
  • 1 10 ounce package frozen peas
  • 4 ounces heavy cream
  • 2 9 ounce packages fresh tortellini pasta
  • 1/2 cup grated Parmesan cheese plus more for serving
  • salt & pepper

Instructions

  • Slice the prosciutto into strips.
  • In a large saute pan heat olive oil over medium heat and add the prosciutto. Fry until crispy.
  • Add the frozen peas and smashed garlic.
  • Mix and add salt & pepper.
  • Continue to cook until peas are tender, about 10 minutes.
  • Add your cream to the prosciutto and peas. Let this simmer for about 5 minutes to reduce the cream a bit. Meanwhile get your pasta water going and cook pasta according to package directions.
  • When your tortellini are cooked, add them to you pan with the sauce and mix until combined. Turn off the heat and add the Parmesan cheese. This should thicken the sauce (add more cheese for thicker sauce). Remove the garlic if desired ( I don't).
  • Serve topped with extra Parmesan cheese.
  • Enjoy!
