String Beans & Sun Dried Tomatoes-quick side dish

Here a quick and easy side dish perfect for summer! String beans with sun dried tomatoes looks beautiful and tastes delicious! It’s tangy and crisp and just plain good! I used smoked sun dried tomatoes for this dish. I actually bought them by accident, but they turned out to be perfect with our grilled steak dinner. I think something about but a bbq and/or grilling really went well with the smoky flavor of the sun dried tomatoes. But don’t fret! Plain sun dried tomatoes work just as well. I also used a little white wine in this dish. Feel free to leave it out, but it does add some depth to the beans. Also, I used a red onion here, because that’s what I had, but any onion will work. Also, the onion will change to a light red color no matter what kind of onion you use! Shallots would be tasty too! This doesn’t take long. We like our green beans crisp and crunchy, so we don’t cook the for a very long time, but continue to add broth or water and steam the beans until you get to them just the way you like them

Ingredients

  • 1 pound string beans washed, ends trimmed
  • 1 3 ounce package julienne sun dried tomatoes I used smoked
  • 2 tablespoons olive oil
  • 1/4 large red onion ( use whatever king of onion you like) chopped
  • 2 cloves garlic chopped
  • 1/4 cup white wine optional
  • 1/4 cup chicken broth or water add more as needed
  • 1 tablespoon butter
  • salt & pepper

Instructions

  • Chop your garlic and onion.
  • Heat olive oil in a large saute pan over medium heat. Add onions and garlic and salt & pepper. Cook until the garlic and onion start to cook down slightly.
  • Add sun dried tomatoes and cook until the tomatoes release some of their oils-about 5 minutes.
  • Add the string beans and toss until they are coated with tomato, onion & garlic. Add more salt & pepper if needed.
  • Add the wine if using & cook until the wine has evaporated. Skip this step if not using wine.
  • Add chicken broth or water and cover the beans and allow them to steam until they reach their desired level of crunchiness. About 10 minutes. Add more broth or water as needed to cook the beans.
  • At the end, add 1 tablespoon of butter to the pan, and give it a final quick mix.
  • Check for seasoning. Serve!
