Sandwich Peppers (not just for sandwiches)

If you haven’t figured it out, we Italians love our peppers. My mom taught me this trick. These peppers are so easy to make and are so good on just about anything. I like to make a big batch of these and use them all week long on sandwiches, salads and sometimes just as a snack. I use a few different seasoning here, but you can really use just about anything you like. Any type of seasoning will work. Of course, I like to keep things Italian style! Try these ASAP, your boring turkey sandwich will thank you!

Sandwich Peppers

Ingredients

  • 4 red peppers
  • 2 tablespoons olive oil
  • 1 teaspoon granulated garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • pepper to taste

Instructions

  • Pre-heat oven to 375 degrees.
  • Gather your peppers.
  • Wash, seed and quarter the peppers.
  • Place. the peppers on a large baking sheet. Add the herbs and oil. Toss until the peppers are coated.
  • Roast in the oven for 30-40 minutes until they are mostly wilted and a bit charred.
  • Remove from the oven and cool slightly.
  • Top salads or sandwiches.

Notes

You can substitute Italian seasoning for those listed above.
These will keep up to a week in a storage container in the fridge- ours never make a week!
