Quick Bacon & Peas

I’m always searching  for a quick side dish. You know, just something you can throw together in a flash with the rest of dinner is cooking, or almost done. Isn’t that the way it is? You have planned for your main course, but you need something to serve on the side that comes together as you finish up the star of the meal (whatever that may be). Only few ingredients and I bet you already have them on hand. No shopping for extra stuff.

Peas are just one of those thing that really don’t get enough credit. I really like them. In fact, pasta with peas is a favorite of mine. Your probably accustomed to just a can of peas dumped into a bowl, or one of those steam bag microwave deals. I like to use frozen peas for this recipe. I just feel like they hold up better. Also, when they cook up they tend to stay crisp. Canned peas would probably get a little smooshy and mushy. But peas done right are really tasty.

Enter bacon. Everything is better with bacon. Even peas. I promise. Remember how I told you I always have those real bacon bits hanging around? Well, this is why. They really come in handy! Of course you can always use you leftover weekend bacon. We almost always have a few slices leftover.

Try this next time you are running around like chicken with its head cut off trying to get dinner on the table. It pairs well with steak or chicken nuggets!

Peas & Bacon

Ingredients

  • 1 tablespoon olive oil
  • 3 tablespoons real crumbled bacon bits or 2 -3 slices chopped leftover bacon
  • 10 ounces frozen peas
  • salt & pepper

Instructions

  • Heat 1 tablespoon of olive oil to a small or medium sized saute pan. Add your bacon and get it crispy.
  • Add the frozen peas. This will create a little water once the peas defrost in the pan. This will help cook the peas. Saute the peas with the bacon until all the liquid gets absorbed. Keep stirring. Add salt & pepper.
  • Take a taste and make sure the peas are no longer frozen. I actually take things a little further until the peas have a little char on them (but cook to your taste). Serve!
