Parmesan Potatoes

My potato obsession continues…

Here you go folks. Another day, another potato recipe. I just can’t stop myself. Potatoes are really just the perfect side dish, am I right? Anyway, this one is really easy. Just toss, press and bake.

Parmesan cheese makes everything extra delish. Don’t hate me, but please don’t  use the stuff in the green can ! Life is to short for the stuff in the green can! Go get some good quality Parmesan cheese. Grate it yourself (this is what we do) or there are some good quality Parmesan cheeses already grated right in the fancy cheese section of the grocery store. Splurge on the good stuff for this one. I don’t think this recipe would taste the way it should otherwise.  I promise it will be worth it!

I recommend using non-stick foil here if you have it. It really does make a difference. You can try oiling a foil lined cookie sheet if you don’t have the non-stick foil. You could also try a non stick cooking mat. With this kind of recipe, we want the potatoes to come off the baking pan as easily as possible. The non-stick stuff does the trick here.

So you know those Parmesan crisps that were everywhere for while? Well this kind of plays on that, but on a potato! Genius! These potatoes are salty, herby, and crunchy all at the same time. They look amazing out of the oven and taste as good as they look!

Parmesan Potatoes

Ingredients

  • 1 pound small potatoes
  • 1/2 cup Parmesan cheese grated (you might need a little extra)
  • 1 tablespoon olive oil
  • 2 teaspoons fresh parsley finely chopped
  • 2 cloves fresh garlic finely chopped
  • salt & pepper

Instructions

  • Pre-heat the oven to 400 degrees. Rinse and scrub the potatoes. Cut the potatoes in half (cut the larger ones in quarters). In a large bowl toss the potatoes with the oil, garlic, parsley and salt & pepper. Make sure they are nicely coated.
  • Put the grated cheese on a flat plate. Take each potato half and press in into the Parmesan cheese.
  • The cut surface of each half should be covered in cheese. Repeat with the remaining potaoes.
  • Place the potatoes cut side down on a cookies sheet lined with non stick foil.
  • Bake for 30 minutes. Remove potatoes from them oven and flip them over.
  • Transfer to a serving dish and enjoy!
