Parmesan & Pistachio Crusted Pork Chops
Here’s a fantastic dish. Parmesan & pistachio crusted pork chops are very easy and quick and are a new take on that same old breaded pork chop. Pistachios are kinda a big deal for me. They are a great snack, but they are very versatile. They are really delicious in many recipes and sweets. In fact, when I’m in Italy, my favorite gelato flavor is pistachio. If you are ever able to get over there and try the gelato, I highly recommend pistachio flavor. And that’s just the thing, pistachios are sweet and savory! The flavor is subtle and mild, but very distinct. The crunch and the taste the pistachios add to the breaded chop is delicious, plus this is simply baked and not fried. The kids enjoyed this as well!
Parmesan & Pistachio Crusted Pork Chops
Servings 4 servings
Ingredients
- 4 boneless pork chops about 1/2 inch thick
- 3 tablespoons olive oil
- 1/4 cup pistachios shelled and chopped fine
- 1/2 cup Italian style breadcrumbs
- 1/2 cup Parmesan cheese grated
- salt & pepper
- lemon for squeezing on top when serving
Instructions
- Preheat oven to 400 degrees.
- Using about half the olive oil, brush each pork chop with oil and season with salt & pepper.
- Chop pistachios with a mini food chopper, pulse in a blender, or place in a zip top bag and crush them with a meat mallet. You want them chopped fine, but a few larger chunks are fine- I like the texture!
- Add the pistachios, cheese, breadcrumbs and salt& pepper to a shallow bowl and mix.
- Press each pork chop into the mixture to coat on both sides.
- Oil a baking sheet with the remaining oil and place the coated pork chop on the sheet for baking.
- Bake for 30 minutes until golden brown and the pork is cooked through.
- Remove to a serving platter and serve with a squeeze of lemon on top!
