Fennel Apple & Walnut Salad-My First Recipe!
So we will start out easy. A salad! This is one of my favorites! I read a similar recipe somewhere in a cooking magazine a million years ago. The recipe has since evolved into this gem. I make it often. It only has a few ingredients and it tastes amazing! If you’ve never had fennel before, it has almost a mild sweet licorice taste. It gets combined with the tang of the green apple and creamy blue cheese, The walnuts add a nice crunch! This salad packs a flavor punch. I hope you enjoy it! Fennel Salad
This super simple salad is sure to please and has some unique flavors!
Servings 4 people
Ingredients
- 1 medium green apple
- 1/2 large fennel bulb use a full bulb if it's a small one
- 1/4 cup crumbled blue cheese
- 1/4 cup chopped walnuts
- 1 1/2 tablespoons olive oil extra virgin is best
- 3/4 tablespoon apple cider vinegar you can use white balsamic, or champagne vinegar
- salt to taste
- pepper to taste
Instructions
- slice the fennel bulb in thin strips. Don't forget to remove the tough core from the fennel.
- Slice the apple into thin half moon strips
- Toss in the blue cheese and walnuts
- Add salt and pepper to taste
- Add the oil and vinegar
- Toss to combine!
Notes
Work quickly so the apples don't turn brown! If you a slow chopper/slicer, sprinkle your apples with a little lemon juice or vinegar while you work!
I like things a little sour (despite my sunny disposition)! Feel free to adjust the oil and vinegar ratio to your liking!
This recipe will serve 4, but my husband and I have been known to eat it all (it's a salad, so that counts as healthy) !
