Gnocchi with Gorgonzola Cream Sauce & Bacon
My husband and my Dad love gorgonzola cheese! It’s stinky and pungent and not for the unadventurous. In my house you will almost always find a hunk of it in the fridge. My Dad loves to spread it on good crusty Italian bread as a snack or alongside whatever’s for dinner!
It is lovingly called Italian blue cheese, but the flavor is distinctly different. There are two types: dolce and piccante. As you can guess, the dolce variety is creamier and mild. On the other hand, the piccante kind is usually firmer and has more or a “bite.” It is easier to find gorgonzola dolce, or you may not even get a chance to choose a most stores may only have one type of gorgonzola. Try to get you hands on one that will melt easier. The dolce works better here, but most gorgonzola cheeses at typical grocery stores are the creamier type anyway.
Someday I’d like to try my hand at making homemade gnocchi, but today is not that day. I like any brand you can find that is made in Italy.
There are only a few ingredients here and this dish comes together quickly and easily. A great recipe for back to school!

Gnocchi with Gorgonzola Cream Sauce & Bacon
Ingredients
- 1 pound gnocchi pasta
- 2 cups milk not skim
- 2 tablespoons butter
- 2 cloves garlic smashed
- 1/2 cup Parmesan cheese grated
- 4 ounces Gorgonzola cheese crumbled or broken into small pieces by hand
- 2 tablespoons leftover cooked crumbled bacon
- salt & pepper
Instructions
- In a non stick saute pan add the milk and heat over medium heat to a slow simmer. Reduce the heat to medium low. Add the crushed garlic and butter and simmer for five minutes.
- Fish out the garlic and add the crumbled gorgonzola cheese. Whisk until melted.
- Get your gnocchi going. They only take about 3-5 minutes to cook.
- While the gnocchi cook, add the Parmesan cheese to the sauce. Add salt and pepper to taste. Add more cheese if the sauce is too thin (either more gorgonzola or Parmesan). Keep whisking!
- Drain the gnocchi and gently mix with the cheese sauce. Top with crumbled bacon & serve!
