Baked Figs!

Are you new to these little delights? These were always around growing up. Especially picked straight from a tree in Italy on summer vacation! As we speak,  I have a fig tree in my yard.If you haven’t had the taste sensation that is a fig, you are in for a serious treat! They are sweet and succulent and can be made savory or sweet when used in recipes. The taste is hard to describe, but I promise it’s worth trying. You can find figs fresh, frozen and even dried.  They really pair well with pork, but can be made into some really fabulous desserts!

For this recipe I use the fresh kind. In particular brown turkey mission figs. Summertime seems to be the best time to find fresh figs. Don’t pass these guys up at the grocery store! I usually double this recipe when I have company. It makes for a truly spectacular appetizer that your party guests will definitely remember! Sometimes I just make this as a side dish for dinner. Either way you will enjoy it!

I use blue cheese in this recipe. Gorgonzola is amazing too, and sometimes I will use that instead. If blue cheese isn’t your thing, try teleggio or fontina cheese here. You will also want to use some good quality balsamic vinegar and good quality honey. See where we are going here? Don’t get scared, this will be amaze balls!

Figs with Blue Cheese, Walnuts and Honey

Prep Time 10 minutes

Servings 8 people

Ingredients

  • pound fresh figs
  • 2-3 ounces crumbled blue cheese gorgonzola is good too
  • 2 tablespoons chopped walnuts
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • olive oil for oiling the cookie sheet

Instructions

  • Pre-heat oven to 400 degrees. Wash the figs, cut off the stem and cut them in half. Place the figs cut side up on a lightly oiled cookie sheet. Drizzle the figs with balsamic vinegar and roast for 5-7 minutes. This will help sweeten the vinegar.
  • Remove the figs from the oven and stuff the figs with some chopped walnuts . Just press them into the center opening. Top with crumbled blue cheese. Place them back the over for an additional 5-7 minutes or until the cheese is melted.
  • Remove from the oven and drizzle with honey.
  • Serve!
