Eggs in Sauce
My kids love this one. This one of those “I have no idea what’s for dinner tonight!” kind of recipes. Usually, if I tell my kids that I have not had a chance to plan dinner, this is what they ask for. It is really easy and fast. I feel like the kids get the protein they need from this, plus they get to dip bread in tomato sauce- yes please!
I like to use a large fry pan for this guys.You need something with high sides and some depth. You can use my Classic Tomato Sauce recipe for this, or use your favorite jarred sauce (yes, I said it). This is supposed to be easy, so if all you’ve got is jarred sauce, so be it. You can cheat the system here by making a quick sauce. Just add some grated garlic and onion to some oil and saute, the add some tomato puree and some water. Season to taste with some salt and pepper. Add a lot of fresh basil, and cook for about 20 minutes on a high simmer and you’ll have a quick sauce for your eggs! An even bigger cheat? Gently heat some olive oil in the pan and add some granulated garlic and onion powder. Add the tomato puree and season as stated above. If you don’t have fresh basil, use some dried oregano.
I use a ramekin to slide my eggs into the sauce, but a small bowl will work fine. I want to get as close ti the pan as I can. Then the kind of poach in the sauce. It is magic when you break that yolk and have all of that yummy goodness mixed with the sauce! All you need here is sauce and eggs.That’s it! Serve this with crusty buttered bread or toast. Yum!
Eggs in Sauce
Ingredients
- 4 cups tomato sauce
- 6 eggs
Instructions
- Use a deep fry pan to cook your tomato sauce as stated above or use my Classic Tomato sauce recipe.
- Turn the pan down to low. Slowly drop eggs in the pan one at a time with a ramikin.
- Continue to do this until all the eggs are nestled in. Make sure each egg has it's own space.
- Lightly spoon some of the sauce over each egg and cover for 3-5 minutes.
- Gently scoop each egg out onto a plate and top with sauce. Break that yolk with some bread!
