Speedy Penne with Sundried Tomato Cream Sauce
Been dreaming about this one for awhile. Anything with a cream sauce is going to be good. So here is my Penne with Sun Dried Tomato Cream Sauce. I made something recently with sun dried tomatoes, and they always leave pretty color behind no matter they are cooked in or with. I thought to myself this would leave some cream sauce a really beautiful color and be super tasty. I happen to love sun dried tomatoes. My Mom actually uses them a lot in her varied tomato sauces for flavor! I have a version of a tomato sauce with fresh tomatoes and sun dried tomatoes to share with you someday! My kids aren’t crazy about sun dried tomatoes, but the sauce itself is so yummy they didn’t mind this one. I made my own cream sauce and added some cheese, just to lighten this up. Add some sliced chicken breast, mushrooms or spinach to amp this up! This is one of those under 30 minute dinners! Here is what I came up with…
Speedy Penne with Sundried Tomato Cream Sauce
Ingredients
- 1 pound penne
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 tablespoon flour
- 1 3 ounce package sun dried tomatoes thin strips
- 1/2 cup Parmesan cheese more if you like it cheesey
- 1 cup milk warm
- chicken broth or stock if needed
Instructions
- Prepare the garlic and tomatoes.
- Cook pasta according to package directions.
- While pasta is cooking, in a large saute pan heat olive oil over medium heat and add garlic and tomatoes. Saute for a minute or two.
- Add the butter and flour.
- Stir until a paste forms.
- Drop the heat to low. Slowly pour in the warm milk and whisk everything together. Season with salt and pepper.
- Add the Parmesan cheese and continue to whisk gently. Add more cheese if you like things extra cheesy! Add some chicken broth/stock if the mixture gets too thick. It will gradually thicken back up after the stock is absorbed. This will essentially buy some time while your pasta cooks.
- Continue to whisk over low heat until a creamy sauce forms. Check for seasoning.
- Drain the pasta. In a serving bowl, pour the sauce over hot cooked pasta.
