Sausage & Peppers
It has been a crazy week here! Simple meals needed to take center stage this past week. Isn’t it summer break? Aren’t we supposed to be relaxing? Our family vacation can’t some soon enough! Here’s an easy one for you…
This is a truly classic Italian American dish! Sausage & peppers is loved by just about everyone. It’s a super simple dish that is easy to make! It’s a one pan meal. I love mine with a hint of tomato. I do make mine a little saucy because it is fabulous over some pasta or rice. Sometimes I’ll double the recipe because this is even better the next day on a hoagie roll for lunch! It is amazing!
Sausage & Peppers
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage
- 3 peppers (any color) cut into strips
- 1 onion cut into rings or half moons
- 1/2 cup dry red wine
- 1/2 cup water
- 2 tablespoons tomato paste
- 2 teaspoons dried oregano
- salt & pepper
Instructions
- Over medium heat, saute the sausage in 1 tablespoon of olive oil.
- While sausage is browning, cut the onions and peppers.
- Add the onions and peppers to the sausage. Combine.
- Saute for about 5 minutes. Season with salt and pepper.
- In a small bowl, whisk together the wine and tomato paste.
- Add the tomato paste mixture to the onions and peppers and saute for about 2 minutes.
- Add the water and 1 teaspoon of oregano. Bring to a high simmer. Lower the heat to medium low, cover and cook for about 15-20 minutes. For a thicker, less saucy sauce: use less water and/ or cook uncovered. Season with salt & pepper.
- Serve with an sprinkle of remaining oregano. Great over pasta or rice with some crusty bread. Try it in a sanswich!
