Pasta & Peppers- Easy Recipe
This is one of my husband’s favorite recipes. At least that’s what he tells me! Pasta & Peppers is quick and easy, full of flavor and has minimal ingredients! Try this one on a busy night!My kids aren’t huge fans of the peppers themselves, but the flavor the peppers impart on the pasta is really tasty. I’ll still call it a win!
I use red peppers for this dish. If I had to pick a favorite pepper, it would be the red guys. I feel like they are sweeter than the other varieties. I do love all kinds of peppers for certain dishes, but for this one, red peppers are the way to go! I am actually pretty surprised that lately my grocery store is even carrying packages of just red peppers! Perfect!
I mentioned this one was quick. It is! In the amount of time you cook your pasta, this one is pretty much done! I used penne for this recipe, but feel free to use whatever kind of pasta you like, or have on hand. Add some crushed red pepper if you like for a little heat!

Pasta & Peppers- Easy Recipe
Ingredients
- 1 pound pasta use whatever type of pasta you like
- 3 red peppers washed, seeded and cut into thin strips
- 1/2 cup olive oil
- 4 clove garlic peeled and smashed
- 1 handful (about 1-2 tablespoons) fresh parsley chopped
- 1 teaspoon salt
- pepper to taste
- crushed red pepepr optional
Instructions
- Cook pasta according to package directions while preparing the rest of the recipe.
- Prepare your peppers, garlic and parsley.
- In a large saute pan heat olive oil over medium heat. Add garlic and parsley. Add some crushed red pepper if using.
- When the garlic starts to turn golden brown, add the peppers. Season with 1 teaspoon salt and some pepper.
- Cook until the peppers are wilted and soft. I even like to get a little char on them.
- Toss your drained pasta into the pan with the peppers and mix. Check for seasoning.
- Serve!
