Mom’s Roasted Peppers

My Mom has made these for as long as I can remember. These days I love it just as much. These peppers are great as is or on sandwiches (or just a pepper sandwich). We always ate them as a side dish with crusty bread to dip in the oil. This has only 5 ingredients. It’s easy to prepare, but does take some time. You can do them in the oven, as I often do. I’ll just pop ’em in and keep an eye on them while I’m doing other things. To speed thing up, you can throw the peppers on the grill. Once they are roasted and peeled, the rest comes together in a flash! This is not a fancy dish, but just simple and tasty. I make a big batch because they are even better the next day. That means they are perfect for making ahead! They are wonderful hot, cold or at room temperature.

Mom's Roasted Peppers

Ingredients

  • 6 bell peppers varying colors
  • 1/2 cup extra virgin olive oil
  • 3-4 cloves garlic smashed and peeled
  • 1 bunch fresh parsley chopped
  • salt & pepper to taste

Instructions

  • Set the broiler on your oven.
  • Wash and dry your peppers. Place them on baking sheet lined with foil.
  • Broil the peppers in the oven until charred on all sides. Check on them every ten minutes or so and keep turning them until they are black all over. This could take up to 30 minutes or more depending on your oven.
  • Once charred, remove the peppers to a bowl and cover with plastic wrap. Let the peppers sweat for about 15 minutes or until cool enough to handle.
  • Be sure to reserve the liquid from the peppers once cooled. Strain any seeds from reserved steaming liquid and set aside.
  • Once cooled, over the sink, remove the stem (it should pull right out) and peel away all the charred skin. As you do this open up the pepper and discard the seeds. Rinsing the peppers under cold running water helps the process and cools down the pepper.
  • Once you have peeled and cleaned all the peppers place them on a cutting board. Cut them into strips and place them in a serving bowl. Continue with all the remaining peppers.
  • Add the remaining ingredients plus the steaming liquid and stir. Adjust the salt and pepper to taste.
  • Serve. Don't forget the bread!

Notes

You can grill the peppers to speed up the process!
