Mama’s Meatloaf

There are so many versions of meatloaf out there. Everyone has a recipe they like. This is ours. It is pretty traditional. I usually like to stick to recipes my kids will eat, and this one usually works. I did get a few complaints from this particular meatloaf from the crew (the small ones). Apparently, I cut the onions too big and you’d think I put hot sauce in the thing (which isn’t a half bad idea)!  They proceeded to pick out all the onion. They must have seen the look on my face because they told me they enjoy the flavor of onion, they just don’t want to see it. Next time, I’ll use my handy dandy microplane grate the onion and garlic so it appeals to children’s sensitive palettes. Overall the meatloaf got two thumbs up. I’ll call that a win! I thought  it was yummy.

So  a few things with this one. I use this seasoning. It really works well with many different recipes especially for meats. Pick some up in the spice aisle. Also, I picked up a little trick from watching all those cooking shows. I this this trick came from Paula Deen ( I think) and it’s an awesome meatloaf trick. All you need are two slices of white bread. You place the slices in the bottom of the loaf pan to catch all the meat grease. It works! You can eat the bread after if you’re into that, but we don’t.

The Italian version of meatloaf is called ‘polpetone al forno.” The meatloaf can be stuffed with proscuitto and cheese. Challenge accepted I say. I’ll have to file that away for another time. For now, here’s the recipe.

Mama's Meatloaf

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour
Servings 6 serving

Ingredients

  • 1 1/2 pounds ground beef
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup pureed tomatoes
  • 1/4 cup Italian style breadcrumbs
  • 2 cloves garlic chopped fine
  • 1 small onion chopped fine
  • 1 tsp Krazy mixed up salt
  • 1 tablespoon Worcestershire sauce
  • 2 slices sandwich bread
  • ketchup for glaze

Instructions

  • Pre-heat the oven to 350 degrees. Mix all ingredient except ketchup and bread, in a large mixing bowl. Mix well, but do not over mix because it will make tough meatloaf.
  • Place the sandwich bread into the bottom on an ungreased loaf pan.
  • Form the meat into the shape of a loaf and place in the pan. Drizzle the top with ketchup.
  • Cook in the oven for 45-60 minutes or until the internal temperature reaches 160 degrees.
