Lazy weeknight pasta-it was one of those nights…

Last night was just one of those nights. You know what I mean. I felt lazy. The kids felt lazy. But we were hungry. What to do? Pasta! Everybody eats pasta right? Well, we eat a lot of it! We make pasta with Parmesan and butter weekly. It was requested for the millionth time this week. So, this recipe does have butter and Parmesan, but it has other stuff too so at least it was new.

This one is pretty easy. I bet you have everything you need already in the house. No fancy ingredients here. It probably would have been fancier with some fresh basil. If you have it around, use it! I didn’t. Remember, we were lazy. The kids enjoyed this one and said it was really tasty! Keep this one handy for those hectic nights!

Creamy Red Pasta

Ingredients

  • 1 tsbs olive oil
  • 1 small onion grated
  • 2 cloves of garlic grated
  • 1 tablespoon butter
  • 1/2 cup milk
  • 1/4 cup Parmesan cheese grated
  • 1 cup tomato puree
  • 1 pound favorite pasta (16 ounces)
  • salt to taste
  • pepper

Instructions

  • While you are making the sauce cook your pasta al dente. Don't forget to add some salt to the boiling water for your pasta!
  • In a medium saucepan add 1 tablespoon olive oil. Grate your onion and garlic and add to the pan with the oil. I used a microplane. You know that gadget you have and never use? I use it because my kids hate chunky onion and garlic. You can also finely chop your onion and garlic. Saute for a few minutes on medium heat.
  • Drop the heat to a simmer. Add the milk and butter to the pan until the butter melts and the milk is warmed through. Add salt and pepper.
  • Add the tomato puree and continue to simmer on low heat.
  • Strain your pasta, reserving a little of the cooking water. Add pasta, sauce, pasta water and parmesan to bowl and mix together. Yum!
