Italian Sausage in Wine Sauce
Ok, anything that involves wine is going to be good. This is a dish my Mom made growing up all the time. She still makes it for us today. It’s a classic in our house. It is and easy dish that takes very little time to make. It involves a just handful of ingredients that, other than the sausage, you probably have at home. Unless you are like me and always have a package of Italian sausage in the freezer.
The sauce that goes with the sausage is really, really good! Make sure you have plenty of crusty bread to go along with this dish because the sauce it just that good. The wine cooks out (safe for the kids), but leaves a deep flavor. It is truly amazing sometimes, how the simplest dishes have such a flavorful impact. It gets me every time. Most people don’t realize that Italian food is really simple.
I use pork sausage for this one. You can try it with other types of meat, but I really think the sauce wouldn’t quite be the same. I feel like it really has to do with having a proper Italian sausage here. Of course, a really good Italian sausage is another story. I think I’ve found a good one that I like. Some are really fatty or even too salty. Just use your favorite brand. I use mild sausage for the kids, but feel free to use the spicy kind. My kids are not huge Italian sausage fans (such a bummer), but they will eat this dish!

Italian Sausage in Wine Sauce
Ingredients
- 1 tablespoons olive oil
- 1 pound Italian sausage about 5 links
- 1 red onion sliced
- 1/2 cup red wine
- galic chopped optional
- parsley chopped optional
- salt & pepper
Instructions
- Slice red onion. Set aside.
- Heat olive oil in a large saute pan on medium heat. When oil is hot, add the sausages to the pan. Brown on all sides.
- Add the onion to the pan.
- Cook onion and sausage until the onions start to caramelize and turn brown.
- Add the red wine.
- Cover and cook the sausage about 7 minutes. Add the parsley and garlic if using. Remove cover and flip the sausages. They should be picking up the color of the wine. Cook an additional 7 minutes, or until sausage are cooked through. Be careful not to dry out the sauce. Drop the heat if the sauce is evaporating too quickly. Taste the sauce and add salt and pepper if needed.
- Transfer sausage to a serving dish and pour sauce on top.
