Greek Style Potatoes

So, I’m all about potatoes. The other night I was looking for something to make with my main course, and this just popped in my head after checking the pantry. Anything with these flavors is going to be amazing. I’m not sure if this qualifies, but I feel like this could be considered Greek style.

I love Greek food. I swear I was Greek in another life. Just ask me and I’ll tell you. I’ve never been to Greece, but the Greek Isles are on my bucket list. Just give me some feta cheese, Spanakopita, stuffed grape leaves and moussaka, and I’m i heaven! Ok. Maybe I just like the food! It’s always about the food with me!

So these potatoes get roasted with Kalamata olives. I know it sounds strange, but it was really good. The brininess of the olives with a bite of potatoes was delicious! Olive oil, lemon juice, and oregano also came to the potato party. Then things really got tasty!

Greek Style Potatoes

Ingredients

  • 6 small potatoes
  • 1 cup Kalamata olives drained and rinsed
  • 2 tablespoons olive oil
  • 1 tablespoons dried oregano
  • juice of half a lemon
  • zest of half a lemon optional
  • salt & pepper

Instructions

  • Pre-heat oven to 400 degrees. Scrub the potatoes and cut them into small wedges. Leave the skin on. If desired, zest half a lemon and set aside.
  • In bowl, toss the potatoes with salt and pepper, oregano, lemon juice, and olive oil.
  • Add the potatoes to a baking dish and add the olives.
  • Roast for 1 hour. Sprinkle with lemon zest if desired. Serve
