Golden Baked Zucchini – I’m back!

Wow! It’s been tough with no internet! It’s amazing how much we rely on technology these days! I’ve been cooking up a storm (pun intended? Not sure.) and now I have to convert those cooking marathons into actual recipes! Bear with me! Here’s one to get us back in the swing of things!

Zucchini is one of my favorite vegetables! They take on the flavor of what they are cooked with because they are mild in flavor. My aunt actually made this for my sister once and she loved it. So, one afternoon after trying to decide how to cook the zucchini for a family dinner, we decided to try and recreate it. Needless to say, the results were fantastic! I think this will be a new favorite. I’m not sure what to call this recipe. I guess I had to give it a name so…Golden Baked Zucchini it is! It is ridiculously simple, but definitely tasty. Give it a whirl!

Golden Baked Zucchini

Servings 4 people

Ingredients

  • 3 medium zucchini
  • 2 tablespoon olive oil
  • Salt and Pepper to taste
  • 3 eggs
  • 1/4 cup Parmesan cheese
  • 1/2 cup Italian style breadcrumbs

Instructions

  • Pre-heat oven to 350 degrees. Slice each zucchini horizontally into strips.
  • In a bowl toss the zucchini with 2 tablespoons of olive oil and salt and pepper. Lay them on a cookie sheet.
  • In a bowl beat the eggs and add the Parmesan cheese, more salt and pepper.
  • Slowly drizzle the egg mixture over the zucchini with a fork until all the mixture is gone.
  • Sprinkle with breadcrumbs.
  • Bake in the oven for about 15 minutes until the zucchini are cooked through and golden brown.
