Gnocchi alla Sorrentina
Gnocchi is a potato dumpling type pasta. So as you can imagine, it is one of my favorites!This type of pasta is very filling and very delicious. It doesn’t take much to dress this stuff up. Gnocchi alla Sorrentina is some good quality gnocchi with some tomato, basil and mozzarella cheese.Then typically it is baked. The gnocchi themselves take almost no time to cook. Then its just a matter of a a good homemade tomato sauce (take the shortcut here with jarred sauce if necessary).This recipe includes a quick homemade sauce perfect for this dish that cooks in about 20 minutes. Next, some really delicious cheese here is a must!
Last year on vacation in Italy, my boys discovered this dish. They ate it at just about every restaurant we stopped into. So naturally I tried to recreate it at home. It was winner! Now this recipe is on a regular rotation at our house. Enjoy!
Gnocchi alla Sorrentina
Ingredients
- 1 pound gnocchi
- 2 tablespoons olive oil
- 2 cloves garlic finely chopped
- 1 small onion finely chopped
- 1 28 ounce can crushed tomatoes
- 6 ounces fresh mozzarella cubed
- 3 ounces Parmesan cheese grated
- 1 handful Fresh basil
- salt & pepper
Instructions
- Pre-heat oven to 400 degrees.
- Chop the onion and garlic.
- Saute onion and garlic with olive oil for about 2 minutes. Add salt & pepper.
- Add tomatoes. Simmer for 20 minutes. Add salt & pepper.
- When about five minute remain, add half of the fresh basil to the sauce and continue to simmer.
- During those last few minutes, cook the gnocchi and drain them. They only take about 3 minutes to cook.
- In a small baking dish ( I used a 7 inch round baking pan), add a layer of sauce and half the pasta.
- Top with some more sauce, half the Parmesan cheese and half the mozzarella.
- Repeat for a second layer.
- Pop in the oven until the cheese is melted and bubbly-about 5-10 minutes. Top with remaining fresh basil.
- Serve!
