Crazy Easy Caprese Salad

Perfect for a quick lunch, backyard barbecue, or even a potluck. I usually make this in a platter. I slice the tomatoes and season them with salt and pepper. Then I top them with a slice of mozzarella cheese. Next, I drizzle with olive oil and garnish with basil. Easy enough. This is even easier, and I really think it’s just gorgeous. I really happen to like the colors too!

You only need a few ingredients. No cooking required, and it takes about five minutes! I like grape or cherry tomatoes here. I throw them in whole. I like the way they burst in your mouth with a bite of mozzarella!  I use mozzarella “pearls” for this. I find them in the specialty cheese section of the grocery store. Just toss it all together!

You can also top this salad with some balsamic vinegar if you like things tangy. In the stores now, they even have a balsamic glaze or balsamic reduction you can drizzle on top for some added sweetness -that’s what I did here. Most of the time, I skip the balsamic altogether and it’s plenty good!

Caprese Salad

Ingredients

  • 3 tbs olive oil
  • salt and pepper to taste
  • 2-3 cloves garlic sliced
  • 1 pint cherry or grape tomatoes
  • 8 ounces mozarella pearls
  • fresh basil leaves
  • blasamic vinegar or balsamic glaze optional

Instructions

  • Mix all ingredients in a bowl. Drizzle with balsamic vinegar or balsamic glaze if desired.
  • Now eat it!
